Mediterranean Power Bowl Recipe

This meal can be made on the weekends and prepped for the week ahead for lunches.  Makes 4 to 5 servings.  

For the beef/lamb meatballs:

1/4 cup almonds

2 garlic cloves

1 tsp smoked paprika 

1/2 tsp salt

1/2 tsp cumin

1/4 tsp pepper

1/4 tsp coriander 

1/4 tsp cloves

1/8 tsp nutmeg

1/8 tsp cinnamon

1/4 cup onion

1 Tbsp mint

1/4 cup parsley

1 lb ground beef or lamb

Directions for the meatballs:

1.  Heat oven to 350 degrees. 

2.  Pulse all ingredients except meet in food processor until well mixed.

3.  Transfer to a bowl with the beef/lamb and mix thoroughly. 

4.  Shape into meatballs and place on a foil lined baking sheet.  

5.  Bake at 350 degrees for 20 minutes, or internal temperature reaches 160. 

 

Tomato Relish:

2 cups cherry tomatoes, quartered 

2 cups cucumber, chopped

1/4 cup mint

1/4 cup parsley

1/4 cup red onion

Salt and pepper to taste

Directions for the tomato relish:

1.  Mix all ingredients in a bowl. 

 

Yogurt Sauce:

1 cup plain Greek yogurt

1/4 cup shredded cucumber, drained

1/2 tsp lemon juice

1/4 tsp dried dill

Salt and pepper to taste

Directions for the yogurt sauce:

1.  Mix all ingredients in a bowl. 

 

Lentils, Farro, Quinoa, Rice

Use pre-made pouch from Wegmans or make your own mixture of whole grains. 

 

Roasted Red Pepper Sauce

Use Wegmans pre-made or make your own.

Put all items in a container an refrigerate until ready to eat.
