Strawberry Chicken Salad with Strawberry Balsamic dressing and Farro

A great way to use seasonal strawberries for a fast weeknight meal or take as lunch.

Serves 4

Dressing Ingredients:

1 cup strawberries, chopped

1 Tbsp Olive Oil

1 Tbsp Balsamic Vinegar

1 tsp honey

1 tsp fresh chopped thyme

1/4 tsp pepper

1/8 tsp salt

Directions to make dressing:

1. Place all ingredients in a mini food processor and blend until smooth. Set aside until ready to eat. 

Salad Ingredients:

4 (4 ounce) chicken breasts, cooked

8 cups mixed salad greens of choice (Try using seasonal lettuces, spinach, & arugula.) 

1/4 cup thinly sliced red onion

1/4 cup pecans, toasted

1 ounce feta (optional)

1 cup cooked farro

1/4 cup basil, chopped

Directions for Salad:

1. Put all salad ingredients together. Top with the strawberry balsamic dressing. 

2. If consuming later, keep the dressing separate.
