Spicy Spinach and Quinoa Salad
Ingredients:
1 tablespoons fresh lime juice
1/2 teaspoon ground cumin
1 tsp adobo sauce from canned chipotle chiles in adobo sauce
2 tablespoons olive oil
Salt and Pepper to taste
3 cups cooked quinoa, at room temperature
1/4 cup chopped fresh cilantro
2 green onions, thinly sliced
2 cups chopped bell peppers, red, yellow, and orange
1 (15-ounce) can black beans, rinsed and drained
4 cups baby spinach leaves
Directions
- Stir together lime juice through salt and pepper in a bowl. Whisk to make dressing.
- Combine remaining ingredients in a bowl. Pour dressing over the top and mix well.
* If serving later, don’t put the dressing on until it’s time to eat.
