Burger Salad

 

Ever crave a burger but want to have a healthier option? Enter the BURGER SALAD! Patties packed with flavor and a plate full of veggies. Perfect for the summer months but can easily be made year round. This recipe makes 6 servings so enjoy for dinner one night then lunches during the week. #GlutenFree

 

Ingredients:

Burgers:

1/4 cup red onion, minced

1/4 cup parsley, chopped

1/2 tsp black pepper

1/2 tsp salt

1/4 tsp ground red pepper

1/4 tsp ground allspice

3 garlic cloves, minced

1/2 lbs ground beef

1 lbs ground lamb

1 large egg

 

Sauce:

1/2 cup Greek yogurt

1/4 cup canola mayonnaise

1 Tbsp fresh lime juice

1/2 cucumber,  grated

 

Salad:

10 oz mixed greens of choice (kale, romaine, spinach, arugula)

1 tomato, chopped

1 cucumber, chopped

2 Tbsp parsley

 

Dressing:

1 Tbsp fresh lime juice

1 Tbsp olive oil

 

Directions:

  1. Heat oven to 400 degrees. Combine all ingredients for the burgers in a large bowl and thoroughly mix. Shape gently into approximately 12 patties. Place patties on a large tray, covered in foil and sprayed with cooking spray. Bake for approximately 18-20 minutes or until internal temperature reaches 160 degrees. 
  2. Place all sauce ingredients in a bowl and stir to combine. 
  3. Place salad ingredients in a large bowl. 
  4. Prepare dressing and gently stir into salad. 
  5. Place salad on each plate and top with 2 patties and yogurt mixture. 

* To store overnight; keep patties separate from salad and store in the refrigerator.
