Roasted Cherries
When sweet cherries are plentiful at the farmer’s market, this recipe can be used to enjoy them all week long. Spoon the roasted cherries and their juices over yogurt or ice cream, serve alongside a cheese board, or even top grilled chicken or pork. I guarantee you’ll want to make another batch!
Makes about 2 cups Gluten Free
Ingredients
1 lbs sweet cherries, pitted, sliced in half or quarters
1/2 lemon, juiced
1 Tbsp honey
Sprinkle of salt
Directions
1. Heat oven to 400 degrees. Place sliced cherries in a glass or ceremic baking dish.
2. Pour lemon juice and honey over cherries and stir to combine. Sprinkle salt on top.
3. Place in oven and roast for 25 minutes, stirring occasionally. Cherries will darken in color and release juices.
4. Allow to cool completely then store in a glass container in the fridge for up to one week.
