Peach BBQ Sauce

Sweet peaches meet spicy chipotle chilies in this made-from-scratch Peach BBQ Sauce.  Say goodbye to store bought versions that are filled with preservatives and additives.  This homemade version comes together quickly and can even be made in larger batches and frozen to enjoy during the winter months. This version uses chicken, but feel free to substitute pork or a mild white flaky fish such as halibut or cod. This sauce could even be used as a topping for fish or chicken tacos! 

Ingredients:

1 cup peaches, peeled and chopped

1/2 tomato, chopped

1 lemon, juiced

1 garlic clove, minced

1 tsp adobo sauce from canned chipotle chilies in adobo

1/4 tsp pepper

1/4 tsp salt

4 skinless, boneless organic chicken breasts

 

Directions:

  1. Place all ingredients except chicken in a small saucepan.  Bring to a boil then reduce heat to low, simmering until the peaches and tomatoes or soft. Remove the pan from the heat and cool. 
  2. When cool, place the peach mixture in a blender and blend until smooth.  Place half of the peach mixture in a bowl and add the chicken. Allow to marinate for up to 8 hours. In the meantime, cover the remaining sauce and refrigerate. 
  3. Prepare the grill and cook chicken until internal temperature reaches 160 degrees. During the final minutes of cooking, brush some of the additional reserved sauce on the chicken. When ready to serve, top the chicken with the last of the sauce.
