Grilled Shrimp and Watermelon with Summer Relish

This summertime dish comes together in minutes and features the height of summer produce. The combination of sweet watermelon, salty shrimp, and cool relish will make this dish a favorite!

Serves 4

Ingredients

For the Summer Relish:

1/4 cup red wine vinegar

1 tsp Dijon mustard

3 Tbsp Olive Oil

1/2 cup red cherry tomatoes, halved

1/2 cup yellow cherry tomatoes, halved

1/4 cup kalamata olives, chopped

2 scallions, chopped

1/2 green pepper, chopped

2 Tbsp parsley

1 avocado sliced

Salt and Pepper to Taste

For the Salad:

4 slices of seedless watermelon wedges, cut about 1 1/2 inches thick

16 large shrimp, peeled, deveined

 

Directions

1. Heat the grill to medium high.

2. Combine the vinegar, mustard, and olive oil, whisking until thoroughly mixed.  Add the remainder of the relish ingredients and stir to combine. Season with salt and pepper. 

3. Place the shrimp on 2 skewers and season with salt and pepper. Grill shrimp and watermelon wedges until shrimp is cooked through and watermelon is marked. 

4. Place a watermelon wedge on each plate, top with 4 shrimp and relish.
